In your world

What a black belt does in hospitality.

Black Belt is built for the multi-property problem: why two hotels with the same brand standard produce different guest experiences, and what to do about it. Multiple regression relates review scores to operational drivers — wait times, turn times, ticket times — across a portfolio, so capital and coaching go where process is genuinely the cause. Designed experiments test prep schedules, line setups, and staffing patterns deliberately instead of by seasonal trial and error.

The leadership layer matters just as much. A Black Belt builds the improvement portfolio for a property group, develops Green Belts among department heads, and works with brand-standards and revenue teams so that improvement targets what the guest actually notices — not merely what is easiest to audit.

Projects you could run

  • 01Model review scores across a property group against operational measures to find which drivers deserve investment and coaching.
  • 02Design an experiment on prep scheduling and batch sizes to cut food waste across day-parts without stockouts on the line.
  • 03Build an improvement portfolio across a property group and develop Green Belts among its department heads.
  • 04Apply attribute control charts to guest-reported defects so a slipping property is caught in weeks, not at the quarterly review.

The program

Hospitality questions

Asked by people in your field.

We’re a people business — won’t process discipline make service feel scripted?

The opposite, in practice. Six Sigma targets friction — waits, errors, rework, hunting for supplies — not warmth. Every re-fire prevented and every room ready on time returns attention to the guest. The variable being controlled is the wait at the desk, never the personality of the person behind it.

Turnover is high in our industry. Is certifying people worth it?

Aim the deeper belts at the roles that persist — chefs, department heads, GMs — and use White Belt for broad frontline literacy. There’s a second effect worth noting: documented, improved processes make onboarding faster, which softens the cost of the turnover itself. And the credential follows the individual, which honest employers treat as a retention argument, not a risk.

Does this work for a single restaurant, or only for hotel groups?

DMAIC scales down comfortably. A single restaurant has ticket times, order accuracy, comps, waste, and reservations flow — more than enough measurable processes for Yellow or Green Belt projects. The multi-property tools in Black Belt matter for groups, but the core method fits one busy kitchen just fine.
