Green Belt turns a department head into a project leader. You’ll charter an improvement against a guest-visible metric — peak check-in wait, room-turn cycle time, order accuracy, waste per cover — baseline it from data the PMS and POS already collect, and use hypothesis testing to compare day-parts, shifts, and sections with evidence instead of service-industry folklore. Improvements get piloted on a few shifts before they’re asked of everyone.
Control is the phase hospitality needs most, because manager turnover is the historical graveyard of service initiatives. Control plans, standard work, and simple ongoing charts keep a fix alive when the champion who built it moves to another property — which, in this industry, they will.

We’re a people business — won’t process discipline make service feel scripted?
The opposite, in practice. Six Sigma targets friction — waits, errors, rework, hunting for supplies — not warmth. Every re-fire prevented and every room ready on time returns attention to the guest. The variable being controlled is the wait at the desk, never the personality of the person behind it.
Turnover is high in our industry. Is certifying people worth it?
Aim the deeper belts at the roles that persist — chefs, department heads, GMs — and use White Belt for broad frontline literacy. There’s a second effect worth noting: documented, improved processes make onboarding faster, which softens the cost of the turnover itself. And the credential follows the individual, which honest employers treat as a retention argument, not a risk.
Does this work for a single restaurant, or only for hotel groups?
DMAIC scales down comfortably. A single restaurant has ticket times, order accuracy, comps, waste, and reservations flow — more than enough measurable processes for Yellow or Green Belt projects. The multi-property tools in Black Belt matter for groups, but the core method fits one busy kitchen just fine.
